Butchery stops being something that happens behind a counter and becomes something they could actually do.

What Is the NFU AgriFuture Pledge?

The AgriFuture Pledge is an initiative led by NFU Education, developed alongside the British Veterinary Ethnicity and Diversity Society and the Culture Roots Collective. It grew out of the first AgriFuture Challenge Day in January 2025, which brought together around eighty representatives from across farming, food and education, all focused on one question: how do we help racially diverse young people find their way into agricultural careers?

The answer they arrived at was a public commitment. Organisations that sign the pledge promise to acknowledge the inequities that exist in the sector, to make recruitment and training genuinely fair, to build welcoming workplaces for people of every background, and to create real pathways for young people of colour into land-based careers. In short, it asks the food and farming industry to open its doors wider and to mean it.

For a business like ours, that commitment is not abstract. The meat trade in Britain has always been built by people from everywhere. Walk through any wholesale market at four in the morning and you will hear a dozen languages. Halal butchery in particular is a craft carried by communities whose faces are still rare in mainstream agricultural careers material. The pledge puts that right at the centre of the conversation, and we wanted to be part of it.

Why Butchery Belongs in the Careers Conversation

When schools and careers advisers talk about agriculture, the picture is usually a farm: tractors, livestock, fields. What often gets missed is everything that happens between the farm gate and the dinner table. Butchery sits right in the middle of that journey, and it is a genuine skilled trade with a future.

A good butcher understands anatomy, food safety, seam cutting, yield and waste, seasonality, and customer service. Add halal certification into the mix and there is a further layer of knowledge: the requirements of zabiha slaughter, the standards certifying bodies expect, and the trust a Muslim customer places in the person behind the counter. None of this can be learned from a video. It is passed from hand to hand, which is precisely why masterclasses matter.

There is also a plain economic case. The UK has a well-documented shortage of skilled butchers, and businesses across the country struggle to recruit. For a young person weighing up their options, butchery offers something increasingly rare: a trade you can start learning at sixteen, a skill that cannot be outsourced or automated away, and a clear route to running your own business. Our masterclasses are practical from the first minute. We are not fans of long slideshows. Attendees gather around the block and we work through a whole carcass together, explaining every decision as we go.

A typical session covers the primal cuts of lamb and mutton and how to identify each one, knife skills and knife safety, including how to hold, sharpen and respect the tools of the trade, seam butchery, following the natural muscle structure rather than sawing through it, portioning for retail with everything from traditional large cuts to diced meat and roasting joints, and the principles of halal butchery, from certification through to handling and labelling.

Just as important as the technical content is the conversation around it. We talk honestly about what a career in the meat trade looks like: the early starts, the graft, the pride in the craft, and the opportunities. Attendees hear it from working butchers rather than a brochure, and they can ask anything. In our experience, the questions are always sharper than people expect. What does an apprentice earn? How long before you can break down a carcass on your own? Could I do this and still work in my family’s business? These are exactly the questions the AgriFuture Pledge exists to answer.

Careers in Butchery: How to Get Started

Most butchers start with an apprenticeship, typically the Level 2 Butcher apprenticeship, which combines paid work in a butchery business with structured training over around eighteen months to two years. No specific GCSEs are required by most employers, though English and maths help. From there, a Level 3 advanced butchery qualification opens the door to supervisory roles, product development and eventually management or ownership.

The alternative route is the one that has served the trade for generations: walk into a good butchery business, show up on time, and learn at the block. Plenty of excellent butchers, including some of ours, learned this way. Short butchery courses and masterclasses like the ones we deliver are a brilliant way to test the water before committing, and they look good on any application because they show intent.

For those from Muslim communities, halal butchery offers a particularly strong path. The UK halal meat market continues to grow, customers actively seek out butchers they trust, and the combination of technical skill and community knowledge is genuinely valuable.
